Produced in Liguria since 1800, especially in the areas of Ventimiglia and Albenga.
Red meat, game, stewed rabbit, fish and medium-aged cheeses.
Grape variety: Rossese 95%
Alcohol content: 12.0° – 13.5°
Vinification: Traditionally in stainless steel vats with daily pumping over and oxygenation, racking after 5–7 days.
Serving temperature: Slightly chilled, uncork just before serving.
