Our Extra Virgin Olive Oil “Mosto” is an unfiltered and cloudy oil with a smooth, balanced and fruity taste. Ideal for dressing fish dishes, fresh seasonal salads or carpaccio—and for those who love simplicity, it’s excellent on a slice of good bread. A bold yet gentle flavour that reveals its genuine character.
Mosto oil is the first oil extracted from olives, just as it leaves the mill. After resting in stainless steel tanks, it’s bottled to preserve its aroma and rich flavour profile. Its intense, cloudy colour distinguishes it from filtered olive oil. The taste is more decisive and retains its natural essence, the same flavour you’ll enjoy in every dish dressed with this oil.
Noticed a slight deposit at the bottom of the bottle? That’s completely normal—it’s a sediment that reflects traditional cold pressing and the product’s authenticity. These residues are composed of mucilage and pulp particles previously suspended in the oil, making Mosto olive oil even more unique.
The Mosto Extra Virgin Olive Oil available at our mill in Albenga is made exclusively from Italian-grown olives, processed using only mechanical methods. This means it is a 100% Italian cold-extracted oil.
