TAGLIERINI are a traditional long Ligurian pasta, recognizable for their fine, thin strips. There’s also a green variant, obtained by blending borage or nettles directly into the dough.
This pasta pairs wonderfully with pesto, or with rich sauces like rabbit and porcini mushrooms. For a lighter touch, try it with a simple fresh tomato sauce enriched with Ligurian herbs.
